This course examines the key components in developing a strategic business portfolio with emphasis on the bakery and pastry sector. Students conduct feasibility studies and analyze their results to identify a new business concept. Legalities such as leasing, franchising and/or purchasing a bakery as well as the procurement of all necessary equipment to run a successful enterprise will be explored. A research study will be conducted and guide the students in choosing a location; developing a marketing strategy and navigating the legal mine field in starting up a business venture. The students will create a legitimate business plan with a 'pro forma' statement and an executive summary, which they present, to a panel of industry specialists.
