This capstone course is a unique and valuable experience for the students. Each week the students will prepare and present dishes incorporating modern styling concepts and techniques as showcased by a diverse schedule of industry leading guest chefs. Exposure to a variety of ingredients, recipes and cooking techniques representative of current and emerging food trends in the local Canadian food service industry is an integral part of each topic. This course is a great opportunity for the student to meet with and gain insight from these distinguished chefs. The students will prepare and submit a weekly reflection on skills learned, utilized and reinforced during each topic.
