In this course, students apply all the skills and techniques acquired in previous classes. Students are expected to be self-sufficient, coming to class prepared with a timetable/work plan, identifying the mise en place, cooking priorities and full knowledge of the recipes. Unlike other classes, cooking demonstrations will not be provided. This class is the final measurement of the students high quality culinary skills and knowledge to meet industry standards and expectations. Students work independently in this class.
