The Culinary Skills one-year certificate program is designed to provide students with a comprehensive foundation in culinary arts, preparing them for entry-level positions in the food service industry or for further studies in culinary arts. Through a combination of hands-on training, theoretical knowledge, and practical experience, students will develop essential culinary skills, techniques and industry knowledge necessary for success in the field.
Many graduates of this one-year program continue on for another year and complete the Culinary Management diploma program or enter our Cook Apprenticeship program. Since the curriculum for this program is similar to the first year of the Culinary Management program, students can transition into that program after the first semester or at the end of the second semester with bridging courses. Alternatively, students are able to move into the Cook Apprenticeship program provided they have an eligible employer.
Qualified students will complete a seven-week in Semester 2. This field experience takes place in the kitchens of leading hotels or restaurants in the Greater Toronto Area.

An applicant is considered a mature applicant if they have not completed secondary school or other postsecondary school, and will be 19 or older as of the first day of classes. Humber will invite you for testing to demonstrate that you meet all listed course requirements.
An applicant is considered a mature applicant if they have not completed secondary school or attended postsecondary studies, and will be 21 or older as of the first day of classes. Mature applicants for degree programs will be required to meet course requirements at the U/M level or equivalent.

Applicants must have an overall minimum grade point average (GPA) of 65 per cent in the program. Applicants are required to disclose and provide academic transcripts for all course work completed at the postsecondary level.

Canadian citizens or permanent residents with international education are required to provide a credential evaluation. Note, for international High school education course by course evaluations, ICAS must be used. For international post-secondary education, a WES evaluation must be provided. In situations where you expect to apply for transfer credit, it is recommended that a course by course WES evaluation is completed.

Professional Industry Standards
Once enrolled in the program, you will follow professional industry standards for decorum, uniform, hygiene and personal presentation. Practical courses, which take place in a lab, have strict uniform and attendance standards and policies which are mandatory for successful completion of the course. It is mandatory to wear a Humber-issued chef uniform in practical lab classes in this program. Admittance to these classes is not permitted if you are not in uniform. The cost for the uniform has been added to your first semester tuition fees. In order for the uniform to be available for the first day of class, students must submit their size requirements via an online order form.
Practical-based Physical Requirements
Students enrolled in this program are required to be able to participate in practical-based lab activity courses while achieving expected learning outcomes. Students will experience and therefore need to have the ability to and be comfortable with working in loud environments and multitasking, while in close proximity to others at a fast pace; operating high risk equipment (with instruction), including torches/open flames, ovens and knives/sharp objects; standing (wearing safety/steel toe shoes) for up to 5 hours; comprehending and performing complex physical tasks, including using both hands/arms at the same time to grasp food items and equipment; and performing repetitive tasks, including pushing/pulling and moving up to 25 pounds for a distance of up to 50 feet. Prospective students who may face challenges or require accommodation in being able to fully participate in the lab activities are encouraged to discuss their learning objectives with the program co-ordinator before enrolling.
