The Advanced Chocolate and Confectionery Artistry graduate certificate program is a specialized post-graduate pastry arts program designed for graduates of culinary, baking and pastry programs who want to advance their expertise in chocolate and dessert innovation.

This program focuses on high-level chocolate techniques, modern confectionery production and contemporary dessert design. Students gain hands-on experience using professional equipment in Humber’s state-of-the-art bake labs, developing industry-ready skills in:

  • artisanal chocolate production and bean-to-bar techniques
  • modern confections and plated international desserts
  • frozen desserts and specialty preparations
  • multi-tiered celebration and wedding cakes
  • advanced chocolate showpieces and decorative artistry

Through applied research, students explore current trends in chocolate, sustainability in pastry arts and emerging confectionery technologies, preparing them for leadership roles in the evolving culinary industry.

A key component of this advanced pastry arts program is entrepreneurship and product development. Students learn recipe formulation, cost analysis, branding and market positioning — culminating in the launch of their own branded chocolate or confectionery product. This practical business focus prepares graduates to open their own chocolate shop, launch a dessert brand, or pursue management roles in the baking and pastry industry.

Flexible Learning for Working Professionals: hands-on courses take place in class over two consecutive days of the week to accommodate working professionals.

Admission Requirements

Admission selection is based on the following 3 requirements:

    Academic

    To be eligible for admission, you must possess the following:

    • A bachelor's degree, advanced diploma, diploma, or equivalent in baking and pastry arts management, culinary management or apprentice cook program. 

    Mature Applicants

    Diplomas and Certificates

    An applicant is considered a mature applicant if they have not completed secondary school or other postsecondary school, and will be 19 or older as of the first day of classes. Humber will invite you for testing to demonstrate that you meet all listed course requirements.

    Degrees

    An applicant is considered a mature applicant if they have not completed secondary school or attended postsecondary studies, and will be 21 or older as of the first day of classes. Mature applicants for degree programs will be required to meet course requirements at the U/M level or equivalent.

    College Transfer Applicants

    Diplomas and Certificates

    An applicant is considered a college transfer applicant if they have completed some or all of a college-level credential. Humber may use a combination of secondary school and/or college courses and grades to determine program eligibility.

    Degrees

    An applicant is considered a college transfer applicant if they have completed some or all of a college-level credential. Humber may use a combination of secondary school and/or college courses and grades to determine program eligibility. Applicants must have an overall minimum grade point average (GPA) of 65 per cent in the program. Applicants are required to disclose and provide academic transcripts for all course work completed at the postsecondary level.

    University Transfer Applicants

    All applicants whose first language is not English must meet Humber’s English Language Proficiency Policy.

    International Credit Evaluation

    Canadian citizens or permanent residents with international education are required to provide a credential evaluation. Note, for international High school education course by course evaluations, ICAS must be used. For international post-secondary education, a WES evaluation must be provided. In situations where you expect to apply for transfer credit, it is recommended that a course by course WES evaluation is completed.
